Roasted
& hand peeled peppers from Navarra
Piquillo peppers are a small red pepper with a little tail or “pico”
– hence their name – with their own Denominación
de Origen, or guaranteed origin. For generations, these peppers
have been picked and produced almost entirely by hand, using no
chemicals in the washing, roasting, or peeling process. During the
months of September and October, piquillo peppers are hand picked
daily from each plant to ensure their perfect ripeness and shape.
They are then torched, causing them to lose over 60% of their weight
in liquid, and leaving them with a full intense flavour. Once roasted,
they are then hand peeled and de-seeded. The seeds are reserved
from the year’s best crop to be planted the following year.
The peppers are not rinsed before they are packed, leaving them
with specks of black charred skin – one of the hallmarks of
the piquillo. They are then packed by hand in their own juices.
Piquillos have an intense pepper flavour, which is initially sweet
and then develops into a warm, spicy finish with a light, smoky
taste.
El Bierzo peppers from León
On the south side of the Picos de Europa, bordering Galicia and
on the route to Santiago you’ll find El Bierzo. It has numerous,
wide fertile valleys where the rivers Sil and Boeza run. The altitude,
location and geography of El Bierzo provide a splendid microclimate
for cultivating fruit and vegetables. It is an area where growers
and packers work very closely together to maintain high standards
from field to jar. The cold mountain air also produces a dry enough
atmosphere for curing meats. El Artesano offers the best products
from El Bierzo using traditional regional methods. These large,
meaty sweet peppers are beautifully
balanced in flavour, texture and succulence.
