Once again
we are keen to bring you the ingredient in its simplest form: single
olive varieties with no extras. We also include a selection of great
pickles.
Arbequina olives The traditional Catalan olive,
purple-green in colour, round in shape and small in size. The flesh
is slightly crunchy with a very pure olive flavour.
Aragón olives The traditional olive from
inland Aragón, an oval olive with a smooth black skin and
a soft texture.
Gordal olives The queen of olives from Andalucía.
Giant and juicy green, this olive is available with stone or pitted
with a little
chilli.
Manzanilla olives The typical olive of Andalucía,
a medium, round olive, fresh green in colour. Available with stone,
pitted or stuffed with anchovy.
Pelotín olives Small, round and green, from Andalucía.
Marinated cracked green verdial olives In garlic,
oregano and paprika, with a delicate and exquisite flavour with
low acidity and salt.
Marinated black Aragón olives In a garlic,
oregano and paprika marinade, this product is made from the most
select Spanish black Aragón olives. These olives are smooth
and have a shiny skin with a highly prized oil content of 28-30%.
Since it is a fruit that ripens on the tree, it is tender and juicy
and quite different from the black olives that are artificially
coloured by oxidation, which are unnaturally hard and tasteless.
Encurtido mix A delicious mix of green manzanilla
olives, whole garlic cloves and crunchy pepinillos, preserved in
brine and virgin olive oil and delicious as a snack or tapa. From
Andalucía.
Olive cocktail mix Black Aragón and green
manzanilla olives, pepinillos and cebollitas (baby pickled onions),
in a lightly herbed brine.
Pepinillos Small cornichons - sweet and crunchy,
from Andalucía.
Sweet pickled garlic cloves These preserve all the therapeutic characteristics
of fresh garlic but without the strong aroma or flavour. It can
be used straight from the tin as a cold aperitif, or is delicious
pan-fried for about 1 minute with oil and sea salt. It can also
be used as a dressing for oven-cooked meat and fish. From Andalucía.
Guindillas A long, narrow, pointed green pepper.
Available hot (from La Rioja), mildly piquant (from Navarra), or
sweet (from Andalucía).
Caperberries The fruit of the caper bush –
they are crunchy with a mild nutty flavour, from Andalucía.
Available in two grades of size.
Capers in rock salt Small capers with an intense
but extremely fresh flavour, from Andalucía.
